    GARLIC TOMATO BRUSCHETTA

    Recipe Introduction

    Plan ahead…needs to chill at least 1 hour Exchanges
    Serves: 12

    1/4 c. olive or canola oil
    3 T. chopped fresh basil
    3 to 4 garlic cloves, minced
    1/2 tsp. salt
    1/4 tsp. pepper
    4 medium tomatoes, diced
    2 T. grated Parmesan cheese
    1 loaf (1 lb.) un-sliced French bread

    In a bowl, combine the first 5 ingredients. Add tomatoes and toss gently. Sprinkle with cheese. Refrigerate for at least 1 hour. Bring to room temperature before serving. Cut bread into 24 slices; toast under broiler until lightly browned. Top with tomato mixture. Serve immediately.

    One 2 slice serving equals: 156 calories…6 gm fat (1 gm saturated)…1 mg cholesterol…347 mg sodium…22 gm carbohydrate…1 gm fiber…4 gm protein ++++ Exchanges: 1 starch…1 vegetable…1 fat
