    Hot Italian Roast Beef Sandwiches - 20 -- e

    Hot Italian Roast Beef Sandwiches
    Serves: 20

    1 T. margarine
    1 boneless sirloin tip beef roast (5 lbs.)
    1 can (28 oz.) tomatoes with liquid cut up.
    1/3 c. water
    1 T. ground thyme
    1 to 3 tsp. crushed red pepper flakes
    Bread or rolls of your choice

    In a Dutch oven, melt margarine over medium heat. Brown roast on all sides. Add the next 4 ingredients; cover and simmer until roast is tender; about 3-1/2 to 4 hours. Add additional water if necessary to keep roast simmering in broth. Remove meat from broth and reserve broth. Let meat stand 20 minutes. Skim all fat from broth. Trim any fat and thinly slice meat. When ready to serve reheat sliced beef in broth. Serve on bread or rolls.
