Reuben Sandwich

1/2 cup sauerkraut, rinsed and drained
1/4 cup shredded carrot
4 slices rye bread
4 slices (1 oz. each) lean, cooked corned beef
4 slices (3/4 oz. each) fat-free Swiss cheese
Mix sauerkraut and carrot. On bread slices, arrange corned beef, then sauerkraut mixture, and top with Swiss cheese. Broil or microwave until cheese barely melts.
