Turkey and Roasted Red Pepper Sandwiches on Focaccia
Serves: 4
1/2 cup non-fat, whipped cream cheese
2 tablespoons minced, sweet onion
1 tablespoon freshly chopped tarragon
4 small loaves focaccia, sliced in half
3/4 pound sliced smoked turkey breast
4 slices roasted red bell pepper, from a jar
4 lettuce leaves, green leaf, bibb or romaine, shredded
In a small mixing bowl, combine the cream cheese, onion and tarragon.
Lay the focaccia out and spread the cream cheese mixture on each of the slices.
Divide the turkey among the sandwiches and place one slice of the roasted red pepper on each sandwich.
Divide the shredded lettuce among the sandwiches and place the focaccia tops on each sandwich.
Cut the sandwiches in half on the diagonal and serve.
