Broccoli Casserole --e
Serving Size: 8
2 tablespoons stick margarine
2 tablespoons flour
1 cup skim milk
3 ounces reduced-fat cream cheese -- softened
1/4 cup blue cheese – crumbled, optional
2 10-ounce packages frozen chopped broccoli
1/3 cup fresh bread crumbs
Melt margarine. Stir in flour and cook 1 minute. Add milk and continue cooking, stirring, until thickened. Add cheeses and cook until cheese melts and mixture is smooth. Cook and drain broccoli according to package instructions. Stir cheese mixture into broccoli. Turn into a buttered 1/2-quart casserole dish. Sprinkle with bread crumbs. Bake at 350 degrees for 30 minutes.
Note: Fat grams can be lowered omitting the blue cheese.
