MCR: Stuffed Artichoke Casserole --e

- 1 large onion, chopped
- 1/2 teaspoon chopped garlic
- 1 tablespoon olive oil
- 2/3 cup reduced-sodium fat-free chicken or vegetable broth, divided
- 1/2 teaspoon dried oregano leaves
- 1 can (14 ounces) artichoke hearts, drained, sliced
- 2 cups seasoned stuffing cubes
- Pepper, to taste
Combine onion, garlic, oil, and 3 tablespoons broth
in 2-quart glass casserole. Microwave on high power, covered, 3 to 4 minutes, until onion is tender. Stir in remaining ingredients, except salt and pepper, mixing well.
Cover and microwave on high until stuffing is heated through, about 5 minutes. Season to taste with pepper.
