    Nuts: Curried Brown Rice Salad -- e-w

    Curried Brown Rice Salad

    Plan ahead…needs to chill for at least 1 hour
    Exchanges
    Yield: 6 cups

    4 c. cooked brown rice
    1 c. chopped unpeeled tart apple
    1/2 c. raisins
    1/2 c. chopped onion
    1/2 c, slivered almonds, toasted
    1/4 c. fat-free mayonnaise
    1/4 c. fat-free plain yogurt
    3 T. curry powder

    In a large bowl, combine the first 5 ingredients. In another bowl combine remaining ingredients. Pour over rice and stir to combine. Refrigerate for at least 1 hour before serving.

    One 2/3-cup serving equals: 205 calories…7 gm fat (1 gm saturated)…2 mg cholesterol…62 mg sodium…32 gm carbohydrate…4 gm fiber…5 gm protein ++++ Exchanges: 1-1/2 starch…1 fat…1/2 fruit ++++ WWP:
