    Rice: Vegetable Rice Medley - ww

    Vegetable Rice Medley

    Serves: 14

    1 medium leek, white portion only, minced
    2 garlic cloves, minced
    2 tsp. vegetable oil

    4-1/2 low-sodium chicken broth
    2 c. uncooked long grain rice
    1 c. raisins
    2 c. cubed zucchini
    3/4 c. frozen baby lime beans, thawed
    1 tsp. ground turmeric
    1/2 tsp. ground ginger
    Dash cayenne pepper

    1 c. chopped seeded peeled plum tomatoes
    3/4 c. frozen peas, thawed
    1/4 c. minced fresh cilantro or parsley
    Optional: Lemon wedges or hot pepper

    In a Dutch oven, sauté leek and garlic in oil until tender. Add the next 8 ingredients. Bring to a boil. Reduce heat, over and simmer for 15 minutes. Add remaining 3 ingredients; cover and cook 5 minutes or until liquid is absorbed and rice is tender. Sere with lemon wedges or hot sauce if desired.
