    Cookoo Over Couscous
    Makes 8 servings

    1/2 cup chopped onions
    1 clove garlic, minced
    1 1/2 cups sliced mushrooms
    1 cup chopped tomato
    1/2 tsp. dried oregano
    1/2 tsp. ground cumin
    2 cups low-sodium, reduced-fat chicken broth
    1/4 tsp. crushed red pepper flakes
    2 cups couscous
    1/4 cup chopped fresh parsley

    Spray a medium saucepan with non-stick spray. Add onions, garlic, and mushrooms. Cook and stir over medium heat until vegetables are tender, about 5 minutes. Add tomatoes, oregano, and cumin. Cook for 1 more minute. Stir in broth and crushed red pepper flakes. Bring to a boil. Stir in couscous and parsley. Remove from heat. Cover and let stand for 5 minutes. Fluff with a fork before serving.
