    Yellow Salsa Rice -- e

    Yellow Salsa Rice
    Serves: 6 (about 2/3 cup each)

    1 can (14-1/2 ounces) reduced-sodium fat-free chicken broth
    1/3 cup water
    1/2 teaspoon ground turmeric
    1 cup converted rice
    1/4 cup prepared medium, or hot, salsa
    1 medium tomato, chopped
    Salt and pepper, to taste
    Finely chopped cilantro or parsley, as garnish

    Heat chicken broth, water, and turmeric to boiling in medium saucepan; stir in rice and salsa. Reduce heat and simmer, covered, until rice is tender and liquid absorbed, 20 to 25 minutes; stir in tomato during last 5 minutes of cooking time. Season to taste with salt and pepper. Spoon rice into serving bowl; sprinkle with cilantro.
