    Mother Superior's Best Barley

    Mother Superior's Best Barley
    Makes 6 servings

    2 tsp canola or vegetable oil
    1 lb. boneless, skinless turkey or chicken breasts, cut into cubes
    1 1/2 cups chopped celery
    1 1/2 cups chopped carrots
    1 cup chopped onions
    4 cups low-sodium, reduced-fat chicken broth
    1 can (28 oz.) tomatoes, undrained, cut up
    1/3 cups pearl barley
    3/4 tsp. dried marjoram
    1/2 tsp. ground thyme
    1/2 tsp. ground sage
    1/2 tsp. salt
    1/2 tsp. black pepper
    1/4 cup chopped fresh parsley

    Heat oil in a large saucepan over medium-high heat. Add turkey cubes and cook until no longer pink.

    Add all remaining ingredients. Mix well. Bring soup to a boil over high heat. Reduce heat to low. Cover and simmer for 30-35 minutes, until turkey and barley are tender.

    Per serving: 257 calories, 5.4 g fat, 25 g carbohydrate, 26.5 g protein, 565 mg sodium, 59 mg cholesterol
