    Wild Rice Soup -- e-w
    Serves: 6

    1/2 c. lentils
    1 6-oz. pkg. long grain and wild rice blend
    1 14-oz. can low-sodium vegetable broth
    1 10-oz. pkg. frozen mixed vegetables
    1 c. skim milk
    1/2 c. (2 oz.) reduced-fat processed American cheese, cut into pieces

    Rinse and sort lentils, discarding any debris or blemished lentils. Place lentils in small saucepan, cover with about 3 c. water. Bring to a boil; reduce heat to low. Simmer covered, 5 minutes. Let stand, covered, 1 hour. Drain and rinse lentils.

    Cook rice according to package directions in medium saucepan. Add lentils and remaining ingredients. Bring to a boil, reduce heat to low. Simmer uncovered, 20 minutes. Garnish as desired.

    One serving equals: 231 calories…3 gm fat (1 gm saturated)…41 gm carbohydrate…6 mg cholesterol…7 gm fiber…13 gm protein…306 mg sodium +++EXC: 3 starch…1-1/2 fat +++WWP: 3
