    Gone Fishin’ Chowder

    Serves: 12 (about 3 qts.)

    4 bacon strips
    1 c. chopped onion
    1 tsp. dried thyme
    5 c. water
    3 c. diced peeled potatoes
    1-1/2 c. coarsely chopped carrots
    1/2 c. chopped celery
    1/8 to 1/4 tsp. pepper
    1 can (28 oz.) diced tomatoes, undrained
    1 T. dried parsley flakes
    1-1/2 c. cooked fish**

    In a Dutch oven or soup kettle over medium heat, cook bacon until crisp. Drain, reserving 1 T. drippings. Crumble bacon and set aside. Saute onion and thyme in drippings. Add the next 5 ingredients. Cover and simmer got 20-25 minutes or until vegetables are tender. Add tomatoes, parsley and bacon; cook for 10 minutes. Add fish; heat through.

    NOTE** To prepare with fresh fish, dice 3/4 lb. fresh fish and add to chowder at the same time as the tomatoes. Cook for 10-15 minutes or until fish is opaque.

    One 1-cup serving equals: 65 calories…175 mg sodium…15 mg cholesterol…6 gm carbohydrate…7 gm protein…1 gm fat ++++ Exchanges: 1 very lean meat.
