    Hearty Pork Stew w/Sage -- w

    Serves: 6

    2-1/2 lb. boneless pork shoulder
    Nonstick cooking spray
    1-1/2 lb. winter squash (such as butternut), peeled, seeded and cut into 1-1/2-in to 2-in. pieces
    2 T. quick cooking tapioca
    1 tsp. ground sage
    1 10-1/2 oz. can condensed French onion soup
    1/2 c. water

    Optional: Hot cooked noodles or rice

    Trim fat from meat. Cut meat into 1-in. pieces. Lightly coat large skillet with cooking spray; heat over medium heat. Add half of the meat; cook and stir until brown. Remove from skillet. Repeat with remaining meat.

    Place squash in a 3-12 to 4-qt. slow cooker. Sprinkle with tapioca and sage. Add meat. Pour soup and water over meat.

    Cover and cook on LOW for 6 to 8 hours – or – on HIGH for 3 to 4 hours. To serve, ladle stew into bowls. If desired, serve with hot cooked noodles.

    One serving w/o noodles equals: 346 calories…12 gm fat (4 gm saturated)…123 mg cholesterol…565 mg sodium…19 gm carbohydrate…0 gm fiber…39 gm protein +++WWP: 8
