    Ginger Broccoli Stir Fry -- e-w

    Ginger Broccoli Stir Fry -- e-w
    Serves: 4

    4 c. broccoli florets
    2 T. water
    2 tsp. canola oil
    2 garlic cloves, minced
    1 tsp. reduced-sodium soy sauce
    1/8 tsp. ground ginger – or – 1/2 tsp. minced fresh gingerroot

    Place broccoli and water in a 1-1/2-qt. microwave-safe dish. Cover and microwave on HIGH for 2 minutes; drain. In a nonstick skillet or wok, stir-fry broccoli in oil for 6-7 minutes. Add the remaining 3 ingredients; stir-fry 1-2 minutes longer or until broccoli is crisp-tender.

    One 1/2-cup serving equals 41 calories…3 gm fat (trace saturated)…0 cholesterol…70 mg sodium…4 gm carbohydrate…2 gm fiber…2 gm protein +++EXC: 1 vegetables….1/2 fat +++WWP: 1
