Sweet & Sour Turkey
Serves: 4
Nonstick cooking spray
4 turkey breast tenderloin steaks cut 1/2-in. thick (about 1 lb.)
1/3 c. frozen pineapple juice concentrate, thawed
1/4 c. water
1/4 c. red wine vinegar
1 T. soy sauce
1/4 tsp. garlic powder
1/4 tsp. ginger
2 T. cold water
1 T. cornstarch
1 11-oz. can mandarin orange sections, drained
1 6-oz. pkg, frozen pea pods
Optional: tomato wedges
Spray a cold large skillet with cooking spray. Preheat skillet over medium heat then add turkey steaks. Cook over medium heat for 5 to 7 minutes or until turkey is light brown, turning steaks once.
For sauce: Stir together the next 6 ingredients in a small bowl. Add sauce to skillet. Bring to boiling; reduce heat. Simmer, covered, for 12 to 15 minutes or until turkey is no longer pink. Transfer turkey steaks to a serving platter; keep warm.
Stir water and cornstarch together. Stir mixture into skillet. Cook and stir over medium heat until thick and bubbly. Stir orange sections and pea pods into mixture in skillet. Cook and stir about 2 minutes or until heated through. Spoon mixture over turkey steaks. Garnish with tomato wedges, if desired.
