    Portobello Stuffing -- e-w

    Mr. Food’s Quick & Easy Diabetic Cooking
    Portobello Stuffing
    Serves: 6

    1 medium red bell pepper, finely chopped
    1 small onion, finely chopped
    2 T. margarine
    6 oz. Portobello mushroom, chopped
    2 tsp. rubbed sage
    1/4 tsp. pepper
    1 small corn muffin, crumbled

    In a large skillet, sauté onion and bell pepper in margarine for 2-3 minutes or until tender. Stir in mushrooms, sage and pepper. Sauté for 3-5 minutes or until mushrooms are tender. Stir in crumbled muffin and cook 2-3 minutes longer or until heated through.

    One 1/2-cup serving equals: 72 calories (42 from fat)…5 gm fat (0 saturated)…0 cholesterol…65 mg sodium…7 gm carbohydrate…1 gm fiber…2 gm protein ++++ Exchanges: 1 vegetable…1 fat +++WWP:2
