Banana Sweet Potato Puff Casserole

Yield: 6 servings.
2 cups mashed sweet potatoes
1 cup mashed ripe bananas (3 medium)
3/4 teaspoon curry powder
1/3 cup sour cream
1/2 teaspoon salt
1 egg
In a large bowl, combine all ingredients. Beat with electric mixer until light and very fluffy. Turn into 1 quart casserole dish. Bake at 350ºF. in the oven for 20 minutes or until puffed and lightly browned.
