Ken’s Sweet Potatoes
Serves: 10
8 medium sweet potatoes
1-1/4 c. packed brown sugar
1/2 c. apple juice
1/2 c. water
1/2 c. raisins
1 T. margarine
Cook and peel potatoes; allow to cool. Slice and place in a 2-1/2-qt baking dish coated with cooking spray. In a small saucepan, combine remaining ingredients; bring to a boil, stirring frequently. Pour over potatoes. Bake, uncovered, at 350º for 45 minutes, basting occasionally.
