    Spiced Sweet Potato Wedges -- e-w

    Mr. Food’s Quick & Easy Diabetic Cooking
    Spiced Sweet Potato Wedges
    Serves: 6

    5 sweet potatoes (about 2-1/2 lbs.), peeled
    2 egg whites
    1/2 tsp. ground ginger
    1/4 tsp. cinnamon
    1/8 tsp. nutmeg
    1/4 tsp. salt substitute

    Coat 2 large baking sheets with nonstick cooking spray. Slice each potato into 12 wedges. In large bowl, lightly beat remaining ingredients until foamy. Add potatoes; toss to coat completely. Arrange in single layer on baking sheets. Bake at 400-F. for 20 minutes, then turn wedges and bake 15-20 minutes longer or until tender and golden.

    One serving (10 wedges) equals: 157 calories (1 from fat)…0 fat…0 cholesterol…207 mg sodium…36 gm carbohydrate…4 gm fiber…4 gm protein ++++ Exchanges: 2-1/2 starch +++WWP: 2
