Amaretti, Nectarine & Blueberry Crumble
Makes 6 to 8 Servings
8 large nectarines (about 2 1/2 lbs. total)
2 cups fresh or frozen blueberries
1/3 cup granulated sugar
1/4 teaspoon ground nutmeg
2 tablespoons lemon juice
1/3 cup firmly packed brown sugar
2 tablespoons margarine, diced
1 large egg white
2/3 cup coarsely crushed almond macaroons (about 10 cookies, each 1 3/4 inches in diameter)
1/2 cup quick-cooking rolled oats
Vanilla lowfat frozen yogurt (optional)
Pit nectarines; then cut into 1/2 inch thick slices (you should have about 8 cups). In a shallow 2 1/2 to 3 quart casserole, combine nectarines, blueberries, granulated sugar, and nutmeg; mix lightly, then drizzle with lemon juice.
In a medium-size bowl, combine brown sugar, margarine, and egg white; stir until well combined. Mix in macaroon crumbs and oats. Spoon crumb mixture evenly over fruit in casserole.
Bake in a 375 degree oven until crumb topping is well browned, fruit mixture is bubbly, and nectarines in center of casserole are tender when pierced (about 55 minutes). Let cool for at least 10 minutes; serve warm. Top with frozen yogurt, if desired.
