Kiwi Veal
Fresh kiwifruit is combined with tomato preserves to make a fabulous yet simple sauce for veal.
Serves 4.
1/2 cup tomato preserves (see Cook's Tip)
1 kiwifruit, peeled and chopped Vegetable oil spray
12 ounces veal scaloppine, cut 1/4 inch thick
In a small saucepan, combine tomato preserves and kiwifruit. Cook over low heat until heated through, about 3 minutes.
Meanwhile, spray a large skillet with vegetable oil. Place over medium-high heat. Add veal to hot skillet and cook 2 minutes. Turn and cook for 2 minutes more or until tender. Serve with sauce.
"Cook's Tip
Tomato preserves are made with tomatoes, corn syrup, and lemon juice. They are not as sweet as other preserves and are the perfect balance to the kiwifruit in this recipe. Look for tomato preserves with other preserves at the supermarket. If they're not available, choose another lower-sugar preserve, such as apricot or jalapeno pepper.
