    Hail A Cabbage

    Hail A Cabbage

    Makes 4 servings.

    1/2 cup sliced onion rings
    1 clove garlic, minced
    1/2 cup apple juice
    1 cup peeled and grated apples
    2 tbsp. red wine vinegar
    1 1/2 tbsp. brown sugar
    1 bay leaf
    1/4 tsp. black pepper
    4 cups shredded red cabbage
    2 tbsp. chopped fresh parsley

    Spray a large saucepan with non-stick spray. Add onions and garlic. Cook and stir over medium heat until tender, about 5 minutes.

    Dilute apple juice with 1/2 cup water to make 1 cup total. Add to onions and garlic, along with apples, vinegar, brown sugar, bay leaf, and pepper. Stir and bring mixture to a boil. Stir in cabbage.

    Cover and simmer over medium heat until cabbage is tender-crisp, about 12 minutes. Discard bay leaf and stir in parsley before serving.

    Per serving: 89 calories, 0.5 g fat, 21.3 g carbohydrate, 1.5 g protein, 16 mg sodium, 0 mg cholesterol
