    Pineapple Beets

    Pineapple Beets
    Serves: 4

    2 T. brown sugar
    1 T. cornstarch
    1 8-oz. can unsweetened pineapple tidbits, undrained
    1 16-oz. can sliced beets, drained
    1 T. lemon juice
    1 tsp. margarine

    In a saucepan, combine sugar and cornstarch; add pineapple and bring to a boil, stirring constantly until thick, about 2 minutes. Add beets, lemon juice and margarine; cook over medium heat for 5 minutes, stirring occasionally.

    1/4 of recipe equals: 103 calories…1 gm fat (trace saturated)…0 cholesterol…220 mg sodium…24 gm carbohydrate…1 gm protein
