    Cinnamon Orange Pancakes

    Cinnamon Orange Pancakes

    Serves 6

    1 cup whole-wheat flour
    3/4 cup all-purpose flour
    2 tablespoons wheat germ
    1 tablespoon sugar
    2 teaspoons baking powder
    1 teaspoon ground cinnamon
    1 cup fat-free milk
    1 teaspoon grated fresh orange zest
    3/4 cup fresh orange juice (2 medium oranges)
    Egg substitute equivalent to 1 egg, or 1 egg
    Vegetable oil spray

    In a large mixing bowl, combine flours, wheat germ, sugar, baking powder, and cinnamon, stirring well.

    In a small bowl, whisk together remaining ingredients except vegetable oil spray. Pour milk mixture into flour mixture. Stir just until moistened. Don't overmix.

    Preheat griddle or skillet over medium heat. Remove from burner and lightly spray with vegetable oil spray.

    Pour batter onto griddle, using 1/4-cup measure. (You should have 12 pancakes.) Cook until tops are bubbly and edges are dry, 2 to 3 minutes. Turn and cook other side for 2 to 3 minutes.
