    Crispy French Toast

    Yield: 12 slices

    1/2 c. egg substitute
    1/2 c. fat-free milk
    1/4 c. orange juice
    1 tsp. vanilla
    Dash ground nutmeg

    12 slices day-old French bread (3/4-in. thick
    1-1/2 c. crushed cornflakes

    In a shallow dish, combine the first 5 ingredients. Add bread; soak for 5 minutes; turning once. Coat both sides of each slice with cornflake crumbs. Place in a 15-in. x 10-in. x 2-in. baking pan coated with nonstick cooking spray. Bake a 425º for 10 minutes; turn. Bake 5-8 minutes longer or until golden brown.

    One slice equals: 147 calories…1 gm fat (trace saturated)…trace cholesterol…359 sodium…28 gm carbohydrate…1 gm fiber…5 gm protein ++++ Exchanges: 2 starch ++++ WWP: 3.4
