Pina Colada Pancakes

Serves 4... 5 Pancakes & 1/4 cup topping each
Pancakes:
1 cup reduced fat Bisquick
1 egg
1/4 cup sugar
1/2 cup water
1 tbsp coconut extract or flavoring
Topping:
1 ( 8 oz) can crushed pineapple in syrup, undrained
2 tbsp cornstarch
1/4 cup cold water
1 tbsp coconut extract or flavoring
1 tsp rum extract or flavoring
1/4 cup flaked coconut, divided
For pancakes: Combine all ingredients. Preheat griddle. Drop batter by tablespoonfuls to make pancakes that are 2-1/2" in diameter. Cook until bubbles appear all over top. Turn carefully and cook until done. Remove to a platter. Makes 20 2-1/2" pancakes
For sauce: Put pineapple in a small saucepan. Heat over medium heat until bubbling slightly, stirring occasionally. Combine cornstarch with cold water. Stir into hot pineapple, stirring constantly, until mixture is thickened. Remove from heat. Stir in coconut extract and rum extract.
To serve: Place 5 pancakes on each serving plate. Top each serving with 1/4 cup of the sauce. Sprinkle 1 tbsp Coconut over each serving.
