TIP TALK - Healthy Eatin' 1-5-03

    Source of Recipe

    various

...Troubled with no-fat and low-fat food tasting like sawdust. Try some wheat germ on veggies, salads and sandwiches. You can even use it on ice cream instead of syrup. It gives food a delicious flavor.

...To get a good start on the recommended fruit and milk serving for the day: Pour 2 c. of fat-free or skim milk into blender. Add 2 cups of any kind of frozen fruit, a packet of artificial sweetener and a half cap of vanilla. Process until smooth. Tastes like ice cream without the fat…or…an expensive smoothie without the cost.

...To lighten up Mexican dishes, substitute corn tortillas when flour tortillas are called for in recipes. Corn tortillas have less fat and fewer calories than flour tortillas.

...Need a quick and yummy dessert! Spritz flour tortillas with refrigerated butter-flavored spray and sprinkle with a T. of sugar and a couple of dashes of cinnamon. Broil 2-3 inches from the heat until browned. It’s sweet and satisfying.

...Try this for making mashed potatoes without adding butter and milk. Boil 4-5 medium potatoes, mash and stir in 1 can of undiluted 98% fat-free condensed soup (any cream variety is fine). Add a little seasoning to taste for creamy potatoes w/o all the fat.

...To remove fat from pan juices to use in soups and pot pies. Set in refrigerator overnight. The fat will rise to the top and can be lifted off easily with a spoon.

...To preserve ginger w/o freezing: Peel and cut into coarse chunks about 1-inch in size. Place in a glass container, cover with sherry and keep in the refrigerator. The sherry preserves the ginger for months and gives it a delicious flavor. After using all the ginger don’t throw out the sherry. Use a few tablespoons of the ginger-infused liquid in your stir-fries, soups and other Asian recipes.
