The lentil is a cousin of the bean, and both are part of the legume family.

Lentils are shaped like a lens. In fact “lens” is the Latin word for lentil.

Choose plump-looking lentils. Discard if they are shriveled or spotted.

Drain off cooking liquid as soon as lentils are done or they’ll continue to cook.
