Draining tofu helps it to readily absorb marinades and reduces sputtering when frying.

Time Required: 20 minutes
Here's How:
Put a few paper towels on a cutting board or plate.
Cut tofu into slabs.
Place tofu slabs on paper towels.
Cover the tofu with a towel or more paper towels.
Put a weight, such as a heavy can, on top of the tofu.
If possible, tilt the board or plate toward the sink to drain.
Drain for about 15 minutes.
Use the tofu as directed in recipe.
Tips:
For faster draining, simply blot with paper towels.
Thorough draining is most important when tofu will be fried.
