    Recipe Introduction


    This is very much like one of the pastas served at Carrabas, but jazzed up a bit!


    List of Ingredients


    • 15 + Garlic cloves, coarsely chunked (I usually use more)
    • 2 good handfuls Fresh Basil (about 1/4 cup chopped)
    • 1 Large can diced tomatoes, drained well
    • Angel Hair Pasta
    • Salt and Pepper to taste
    • 1/4 to 1/2 cup Extra Virgin Olive Oil


    Instructions


    1. Open tomatoes and set to drain in sieve
    2. Add 1/4 cup extra virgin olive oil to sauce pan and bring to medium-low temperature. Add garlic. If needed, add more olive oil (no more than 1/2 cup) to just cover garlic.
    3. Roast garlic until cooked through (still firm but "mushy" if you poke it with a fork.) About 10 minutes.
    4. While garlic is roasting, start cooking past per package directions.
    5. Add chopped basil to tomatoes with salt & pepper to taste.
    6. Drain pasta. Add tomato mixture to olive oil/garlic mixture and stir well. Pour over pasta and toss.
    7. Serve with a fresh salad and crusty garlic bread for an easy, delicious and light meal.


    Final Comments


    As stated above, this recipe feeds about 4 people. Doubles well if you need to feed more. The key is to add LOTS of garlic.
