    Baked Chicken with Rice

    List of Ingredients


    • 6 boneless, skinless chicken breasts
    • 2 cups uncooked long grain race
    • 1 large or 2 medium sweet onions, chopped
    • 1 large or 2 small green bell peppers, chopped
    • 6 chicken bouillion cubes
    • 4 cups boiling water
    • salt and pepper to taste


    Instructions


    1. Place chopped onions and peppers in bottom of deep, lidded or coverable baking dish.

    2. Evenly distribute rice over onions and peppers.

    3. Place chicken breasts on top of rice in single layer.

    4. Dissolve chicken bouillion in boiling water, and carefully pour over chicken.

    5. Sprinkle with salt and pepper to taste.

    6. Cover tightly and bake at 350° for 1 1/2 hours, or until liquid is absorbed and chicken is well done.
