    MEXICAN LASAGNA

    List of Ingredients




    1 package corn or flour tortillas

    1 pound ground beef

    1 cup salsa

    1 15oz can tomato sauce

    1 package taco seasoning mix

    1 16 oz carton cottage cheese

    2 eggs

    1 1/2 c. shredded cheddar and Monterey Jack cheese, mixed

    Recipe



    Brown meat and drain.

    Stir in salsa, tomato sauce and taco seasoning, simmer, stiring frequently for 5 minutes.

    In a separate bowl, combine cottage cheese and eggs.

    Line the bottom of sprayed 13 x 9 in pan with 1/2 the tortillas, overlapping edges.

    Top with 1/2 the meat mixture.

    Spoon cottage cheese mixture over the meat.

    Add layer of tortillas.

    Spread remaining meat mixture and top with shredded cheese.

    Bake at 375 for 30 - 35 minutes or until bubbly.

    Let stand 10 minutes before serving.
