HOMEMADE QUESADILLA

Flour tortillas - burrito size ( 1 per person) smaller size could be used if you wanted it as an appetizer
shredded cheese ( we use Mexican Blend but you could use cheddar or Colby Jack - 1 package should be enough unless you are making a large number.
Recipe
Lightly spray skillet with cooking spray (you don’t want to use oil or butter because the quesadilla will greasy)
Has to be made 1 at a time.
Put tortilla in heated pan.
Once tortilla is warm, sprinkle cheese on one half of it and fold other half over top.
Keep cooking until cheese is melted and bottom is slightly brown.
Flip over to heat and brown other side.
Once cooked, slide onto plate.
I then cut them in half and each half in half so there are 4 wedges.
Also you can not fold the tortilla. In that case, put cheese on all of the top and cook it on just the 1 side. It can be cut into slices like a pizza or broken off.
You can also add cut up or shredded chicken to it.
