    Curry Chicken Stew

    Serves 6 Points 6

    List of Ingredients

    1 onion, chopped
    1 1/4 pound boneless, skinless chicken breasts, cut into bite size pieces
    1 1/2 c. water (up to 1 c. additional)
    1 cup baby carrots
    8 small new potatoes, quartered
    1 cup peas
    1 can reduced fat cream of chicken soup
    1 T curry powder
    1 t sugar

    Recipe

    Cook onion until soft.
    Add carrots and potatoes.
    Saute for a few minutes.
    Add water.
    Bring to boil.
    Reduce heat.
    continue cooking until vegetables are tender.
    Add cut up chicken breasts.
    During this time add peas, soup and seasons.
    1 more cup of water may be needed at it thickens.

    Serve over rice.
