List of Ingredients
zucchini - sliced
yellow squash - sliced
onion - diced
mushrooms -sliced
canned diced tomatoes (any type - we like garlic and herb)
shredded cheese ( any flavor)
Parmesan cheese
Bread crumbs (optional)
The squashes could be one or other depending on availability or both.
You also could add another vegetable such as eggplant or green, red or yellow peppers.Recipe
Saut� squashes and onions until tender.
Add mushrooms... continue to cook.
Add tomatoes... continue to cook.
sprinkle with bread crumbs (if used) stirring ... use just enough to help bind the veggies.
At last minute, sprinkle shredded cheese on to taste.
Upon serving sprinkle, parmesan cheese on top.
Can be either an entree or a side dish depending on serving size.
