Cherry Streusel Coffeecake
Recipe Introduction
A nice Coffeecake to serve at a Brunch.
List of Ingredients
- 2 1/4 c. flour
- 3/4 c. granulated sugar
- 2/3 c. margarine, softened
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 3/4 c. milk
- 1 Tbsp. lemon juice
- 1 egg
- 1 tsp. almond extract
- 1 (19 oz.) can cherry pie filling
- 1/3 c. sliced almonds
Instructions
- Combine flour and sugar in large bowl. Cut in butter until mixture is crumbly. Set aside 1/2 c. of mixture.
- Add baking soda and baking powder to remaining flour mixture.
- Combine the milk and lemon juice. Stir well and leave 5 minutes until thickened.
- Add the egg and extract to thickened milk; beat well.
- Add the dry ingredients; stir just until moistened.
- Spread 2/3 of batter over bottom and about 1 inch up the sides of a greased 9 inch springform pan to form a shell. Spread pie filling in shell.
- Drop small spoonfuls of remaining batter over pie filling. Stir almonds into reserved crumb mixture. Sprinkle evenly over cake.
- Bake at 350 degrees for 50 to 50 minutes.
