    Sweet Potato Souffle

    This is a family favorite that is served at our Thanksgiving and Christmas dinners.


    List of Ingredients


    • 1 large can sweet potatoes, drained
    • 2 eggs, beaten
    • 1/2 c. sugar
    • 1/2 c. milk
    • 1/4 tsp. salt
    • 1 tsp. vanilla
    • 1/4 tsp. cinnamon
    • dash nutmeg
    • 1/2 stick margarine, melted
    • Topping:
    • 1/2 stick margarine, softened
    • 1/2 c. brown sugar
    • 1/3 c. flour
    • 1/4 tsp. cinnamon
    • 1/4 tsp. nutmeg
    • 1/4 c. pecans, chopped (optional)



    Instructions


    1. In a large bowl, beat the Sweet Potatoes until they are smooth.
    2. Add the remaining ingredients and beat well.
    3. Pour into a greased 2 quart casserole dish and add crumbled topping.
    4. Topping: Combine all ingredients and crumble over yam mixture.
    5. Bake, uncovered, at 350 degrees for 45 to 50 minutes.
