Pooh Bear's Scrambled Egg Sandwich

List of Ingredients
- 2 large eggs
- 1 Tbsp milk (approximate)
- Mayonnaise
- 2 slices bread, any kind
- Pepper to taste (salt and pepper, if you prefer)
- 1 slice Velveeta cheese
Instructions
- In a microwave-safe bowl, beat together the eggs and a small amount of milk until well-blended with a wire whisk or fork. Place in the microwave and cook on HIGH for 1 minute and 30 seconds, or until eggs are thoroughly cooked.
- Spread a small amount of mayonnaise on each of 2 bread slices. Place the cooked egg on top of the bottom slice. Season to taste with pepper. Place the cheese slice on top, or better yet, tuck in between the folded egg so it melts faster.
Slice in half and serve.
Serves 1 Pooh Bear.
Final Comments
VARIATION: Another good thing to do with this sandwich is to add sliced ham to it along with the cooked egg. You can play with this one, adding your favorite toppings and fillings.
