Sounds good! I have not made this recipe yet. I might had some herbs to the packet as well to give flavor. I would also serve it with some chopped olives and feta cheese.
List of Ingredients
1 onion, thinly sliced
1 cup uncooked couscous
3/4 cup tomato juice
1/2 cup water
salt, to taste
pepper, to taste
4 fish fillets (sole, haddock or any white fish)Recipe
Place 4 pieces of parchement paper or aluminium foil 4 inches(10cm) larger than fishh on counter. Spray lightly with cooking spray or grease with oil. divide onion evenly between the pieces of paper. Pour one quarter of the couscous on each pile of onion slices. Combine tomato juice and water in a bowl, season with salt and pepper, and then pour each portion of couscous. Top with fish. Fold long end of paper up and over food so mixture is tightly enclosed. Lift short ends over top and fold twice. Place packets seam side down on a baking pan. Bake in oven preheated to 425 degrees F for 20 minutes, or until fish flakes easily when tested with a fork and onions are tender. Remove from oven and let stand for 5 minutes, or until couscous has absorbed all liquid.
