Chicken with Orange and Coconut

1 lb. (500 g) skinless, boneless chicken breasts, cut into bite sized pieces
1 lime, zest and juice
1 tablespoon (15 mL) vegetable oil
½ cup (125 mL) Coconut milk
½ cup (125 mL) VH® Orange Ginger Sauce
4 green onions, cut into 1 inch (2.5 cm) pieces lengthwise Recipe
Place chicken pieces in a bowl, add lime juice and lime zest and stir well. Set aside to marinate for 1 hour.
When ready to serve, add vegetable oil to wok and heat to high. Add chicken pieces and stir-fry for 3-4 minutes or until golden.
Mix coconut milk with VH® Orange Ginger Sauce and add to chicken. Cook 1-2 minutes (or until thickened).
Serve over basmati rice and garnish with green onions.
