oven roasted sweet potatoes

4 cups coarsly chopped sweet potatoes
1 onion, sliced in wedges
2 garlic cloves, finely chopped
3 tablespoons olive oil
2 tablespoons maple syrup
1 tablespoon fresh thyme
1/2 cup pecan halves
1 tablespoon balsamic vinegar
salt and pepper to taste
Recipe
In large bowl, combine potatoes, onion, garlic, oil and thyme; toss well to coat. Place vegetables in shallow roasting or jelly roll pan. Bake in 425°F (220°C) oven, turning frequently, for about 40 to 45 minutes or until vegetables are soft and golden brown. Add pecans during last 10 minutes of baking. Drizzle with vinegar. Season with salt and pepper.
