    List of Ingredients


    • 4 2/3 cups sifted flour
    • 1 package currants or substitute raisin/cranberries
    • 2 1/2 tsp. Baking Powder
    • 1 1/4 cups butter softened
    • 2 1/2 cups sugar
    • 3 T of lemon juice
    • 1 1/2 tsp. vanilla
    • 4 eggs
    • 1 1/4 cups milk
    • Lemon Glaze
    • 1 cup sifted confectionery sugar
    • 1 T lemon juice
    • 2 tsp. water


    Instructions


    1. Toss 2/3 cup of flour with currants or in this case cranberries.
    2. Sift remaining flour.
    3. Combine in a seperate bowl sugar,lemon juice, and vanilla.
    4. Put in eggs one at a time to sifted dry ingredients
      alternately with milk.
    5. Milk ingredients unti combined.
    6. Fold in cranberries and flour.
    7. Pour into two 9X5 loaf pans-greased and waxed paper lined.
    8. Bake 325 degrees for 1 hour and 25 minutes.
    9. Cool for 15 minutes.
    10. Lemon Glaze
    11. Combine lemon juice, water, and enough confectionery
    12. sugar to make it a pourable glaze.


    Final Comments


    I purchased insulated loaf pans and they seem to help in getting the loaves evenly golden brown.
