Irish Tea Cake

List of Ingredients
- 4 2/3 cups sifted flour
- 1 package currants or substitute raisin/cranberries
- 2 1/2 tsp. Baking Powder
- 1 1/4 cups butter softened
- 2 1/2 cups sugar
- 3 T of lemon juice
- 1 1/2 tsp. vanilla
- 4 eggs
- 1 1/4 cups milk
- Lemon Glaze
- 1 cup sifted confectionery sugar
- 1 T lemon juice
- 2 tsp. water
Instructions
- Toss 2/3 cup of flour with currants or in this case cranberries.
- Sift remaining flour.
- Combine in a seperate bowl sugar,lemon juice, and vanilla.
- Put in eggs one at a time to sifted dry ingredients
alternately with milk.
- Milk ingredients unti combined.
- Fold in cranberries and flour.
- Pour into two 9X5 loaf pans-greased and waxed paper lined.
- Bake 325 degrees for 1 hour and 25 minutes.
- Cool for 15 minutes.
- Lemon Glaze
- Combine lemon juice, water, and enough confectionery
- sugar to make it a pourable glaze.
Final Comments
I purchased insulated loaf pans and they seem to help in getting the loaves evenly golden brown.
