    Chicken and Dumpling Casserole

    List of Ingredients


    • 1/2 cup chopped onion
    • 1/2 cup chopped celery
    • 2 garlic cloves, minced
    • 1/4 cup butter or margarine
    • 1/2 cup flour
    • 2 tsp. sugar
    • 1 tsp. salt
    • 1 tsp. dried basil
    • 1/2 tsp. pepper
    • 4 cups chicken broth
    • 1 pkg. frozen peas
    • 4 cups cubed cooked chicken
    • Dumplings
    • 2 cups buttermilk biscuit mix
    • 2 tsp. dried basil
    • 2/3 cup milk


    Instructions


    1. In large saucepan, saute onion, celery & garlic in butter until tender.
    2. Add flour, sugar, salt, basil, pepper and broth
    3. Bring to a boil. cook and stir 1 minute; reduce heat.
    4. Add peas and cook 5 minutes, stirring constantly.
    5. Stir in chicken
    6. Pour into greased 13x9 inch baking dish.
    7. Dumplings:
    8. Combine biscuit mix and basil in bowl.
    9. Stir in milk with fork until moistened.
    10. Drop by Tablespoonfuls onto casserole (12 dumplings).
    11. Bake uncovered at 350 degrees for 30 minutes.
    12. Cover and bake 10 minutes more or until dumplings are done.
