Jimmy's Pumpkin Cheesecake

List of Ingredients
- 8 oz. Gingersnaps finely crushed
- 3 T. melted butter
- 2 T. Sugar
- 2 pkgs. 8 oz. cream cheese (light ok) softened
- 3/4 cup brown sugar packed
- 3 Lg. eggs
- 2 tsp. pure vanilla extract
- 1 15 oz. canned pumpkin
- 1 T. flour
- 2 tsp. pumpkin pie spice
- Garnish: Whipped Cream and pecans sliced
Instructions
- Mix:
- Combine crumbs w/butter and sugar.
- Press into the bottom of a 9" spring form pan.
- Bake 15 minutes and set aside.
- Beat cream cheese and brown sugar till smooth.
- Add eggs on at a time.
- Add remaining ingredients and beat until smooth.
- Pour into the prebaked pan.
- Bake 50 minutes or until the filling barely moves
- (like stiff jello)
- Cool then chill for several hours or overnight in
- the refrigerator. Garnish and serve.
