List of Ingredients
- 1 9-inch pie plate
- 1 pound of crisp bacon
- 2 egg yolks
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dry mustard
- 1/8 teaspoon cayenne pepper
- 1/2 cup cup grated Parmesan cheese
- 2 cups heavy cream
- 1 teaspoon chopped parsley
Instructions
- Break up crisp bacon and sprinkle half of it into bottom of pie plate.
- Make following custard: Put into a bowl and mix well 2 whole eggs plus 2 yolks,
Dijon mustard, dry mustard, cayenne pepper, bacon fat, and 1/8 cup Parmesan cheese
Scald the cream by heating jsut to the boiling poing (do not boil!).
- Pour scalded cream into custard mixture.
- Bake at 300 degrees for 35 minutes. Remove.
- When set, sprinkle with remaining cheese, bacon and the parsley.
- Serve warm.
