San Francisco Pita Pockets

List of Ingredients
- 1 pkg. (10 oz.) frozen chopped spinach
- 3/4 lb. lean ground beef
- 1/2 lb. fresh mushrooms, sliced
- 1/2 cup chopped onion
- 3 T butter or margarine
- 3/4 tsp. dill weed
- 1/2 tsp. salt
- 1/2 tsp. garlic powder
- 1/2 tsp. pepper
- 2 cups (8 oz.) grated cheeses (1/2 Cheddar & 1/2
- Monterey Jack) - low fat/no fat
- 4 pita breads, cut in half
Instructions
- Defrost spinach in microwave on HIGH for 5 minutes,
- squeeze out excess liquid.
- Microwave meat of HIGH for 6-7 minutes. Drain fat.
- In a larger dish, microwave mushrooms, onion & butter
- on HIGH for 8-10 minutes. Stir in seasonings.
- Microwave on HIGH for 3 more minutes. Remove from
- microwave.
- Stir spinach & meat into mushroom-onion mixture. Fold
- in cheese. Cover with waxed paper or paper plate and
- microwave on HIGH for 3 minutes.
- Open pita breads and fill with meat mixture. Serve
- immediately. Makes 8 servings (if you eat 1/2 a pita).
Final Comments
We are vegetarians so instead of ground beef/turkey we substitute Morningstar Crumbles (or for a slightly different flavor, the sausage patties crumbled up) which can be found at most grocery stores.
