Fiesta Chicken Enchiladas

- 2 cans (10 oz. each) mild enchilada sauce
- 2 cups chopped cooked chicken
- 1/2 cup sour cream
- 1 can (4 oz.) chop green chilies,undrained
- 1/3 cup chop green onions
- 1/4 teaspoon salt
- 2 cups shredded Monterey jack cheese
- 10 (6 or 7 inch) flour tortillas
Instructions
- Preheat ovent to 350 degrees .
- Pour 1 can enchilada sauce in a 9x13 baking disk.
- In large bowl, combine chicken, sour cream, chilies,
- onions, and salt; stir in 1 cup of the cheese.
- Roll up tortillas and place, seamside down, in baking
- dish. Pour remaining 1 can enchilada sauce over top;
- sprinkle with remaining 1 cup cheese.
- Bake, uncovered for 30 minutes or until cheese is
- melted and enciladas are heated through.
- I sometimes use a little more cheese on top.
