Oriental Chicken Salad

List of Ingredients
- Main Dish
- 4 cups chicken breast, chopped and cooked (about 8 1/2 breasts)
- 1 16 oz. bag colorful coleslaw mix
- (use bag with carrots and purple cabbage)
- 8 green onions, chopped fine
- 1 cup almonds, slivered
- 4 T sesame seeds
- 2 packages Ramen noodles (Oriental flavor)
- Dressing
- 1 cup vegetable oil
- 6 T rice vinegar
- 2 seasoning packages from Ramen noodles
- 2 T. sugar
- 1/2 tsp. salt and pepper
Instructions
- In a large bowl, combine chicken breasts, coleslaw mix
- and green onions.
- Mix well, set aside.
- Lightly toast almonds and sesame seeds in a heavy
- skillet over medium heat, shaking constantly, until
- fragrant and golden. Cool.
- Sprinkle on top of salad and mix. Crush Ramen noodles
- and add to salad mix. Toss gently to mix well.
- Dressing
- In a seperate bowl, combine oil, rice vinegar,
- seasoning packages from Ramen noodles, sugar salt and
- pepper and whisk. Just before serving, pour dressing
- over salad and mix well.
