    Oriental Chicken Salad

    List of Ingredients


    • Main Dish
    • 4 cups chicken breast, chopped and cooked (about 8 1/2 breasts)
    • 1 16 oz. bag colorful coleslaw mix
    • (use bag with carrots and purple cabbage)
    • 8 green onions, chopped fine
    • 1 cup almonds, slivered
    • 4 T sesame seeds
    • 2 packages Ramen noodles (Oriental flavor)
    • Dressing
    • 1 cup vegetable oil
    • 6 T rice vinegar
    • 2 seasoning packages from Ramen noodles
    • 2 T. sugar
    • 1/2 tsp. salt and pepper


    Instructions


    1. In a large bowl, combine chicken breasts, coleslaw mix
    2. and green onions.
    3. Mix well, set aside.
    4. Lightly toast almonds and sesame seeds in a heavy
    5. skillet over medium heat, shaking constantly, until
    6. fragrant and golden. Cool.
    7. Sprinkle on top of salad and mix. Crush Ramen noodles
    8. and add to salad mix. Toss gently to mix well.
    9. Dressing
    10. In a seperate bowl, combine oil, rice vinegar,
    11. seasoning packages from Ramen noodles, sugar salt and
    12. pepper and whisk. Just before serving, pour dressing
    13. over salad and mix well.
