Taco Soup

List of Ingredients
- 1 lb original Bob Evans zesty sausage
- 1 1/2 tsp. olive oil
- 1/2 small diced spanish onion
- 1 jalapeno pepper, diced and seeded
- 1 1/2 cup beef broth
- 1 cup fresh/canned diced tomatoes (peeled and seeded)
- 1 cup tomatoe sauce
- 1/2 T ground cummin
- 1/2 T chili powder
- 1/3 tsp. salt (sprinkle)
Instructions
- Crumble and cook sausage in olive oil until no longer
- pink but not yet browned.
- Add onion and pepper and cook until onion is tender.
- Add remaining ingredients and bring to boil in
- uncovered kettle, then simmer uncovered for 15 mins.
- Garnish with shredded cheese and crushed taco chips
- in individual bowls.
Final Comments
Great for cold days.
